Sammamish sits on the plateau east of Lake Sammamish, and it was developed almost entirely as residential neighbourhoods. Commercial activity is concentrated at Sammamish Commons and in the Highlands, and there is very little of it relative to the population. A city of roughly sixty thousand people is served by a small number of restaurants, cafes and grocery operations.
That ratio is the thing worth understanding about refrigeration here. A small number of kitchens serve a large residential population, which means each one runs at higher utilisation than its size suggests and each one matters more when it goes down. There is no dense restaurant row where customers simply go next door.
Demand is also strongly weekend and evening weighted. The plateau empties toward Bellevue, Redmond and Seattle during the working day and fills again in the evening, so kitchens take a large share of their covers in a compressed window. Equipment sits relatively quiet and is then worked hard, which is a more demanding cycle than steady all-day service.
Because equipment counts per kitchen are modest, redundancy is minimal. Losing a reach-in or a prep table does not reduce capacity, it removes a station. We service the full line on one visit where that makes sense rather than treating the reported unit in isolation, since in a small kitchen a single fault frequently has knock-on effects across the line.
