A Kolpak walk-in panel and a Hoshizaki cuber share almost nothing beyond needing refrigerant, so a technician trained on one is not automatically useful on the other. That is the argument for an independent service company over a dealer: we see all of it, every week, across three dispatch locations.

Brand mix here follows the local economy. True and Turbo Air dominate independent restaurant lines because the equipment is affordable and parts are everywhere. Hoshizaki concentrates in the International District and the sushi and ramen corridor. Hussmann and Federal Industries own grocery and deli. Kolpak, Norlake and Master-Bilt carry the walk-in market, while Barr, Amerikooler, Bally, American Panel, KPS Global, Polar King and Thermo-Kool appear on larger panel builds and cold storage in the Kent Valley and along the Port of Tacoma freight belt.

Older building stock is the common thread. Much of Seattle’s food service operates from structures built long before modern commercial kitchens existed, which means condensers pushed against walls, marginal ventilation and electrical service that predates the current layout. Equipment rated for conditions it never actually sees is the most frequent cause of a unit running warm, regardless of whose badge is on the front.
