Seattle runs one of the densest commercial kitchen markets on the West Coast, concentrated into a handful of districts: the downtown core and Pike Place, Capitol Hill, Ballard, Fremont, the International District, SODO and West Seattle. Much of that food service operates out of buildings that predate modern commercial kitchens by decades.

The well is the smallest refrigerated volume in the kitchen and the most exposed, standing open to the room every time the lid comes up.
